Description: Hyssop, a member of the mint family, is normally that one beautiful hedge plant everyone admires in an edible landscape design.  It grows compact, 2 ft. tall hedges with showstopping, dark blueish purple flower spikes on woody stems from July to November.  Hyssop's basil like flowers make for beautiful cut flower arrangements, and are loved by bees, butterflies, and hummingbirds, so make sure to include it if you wish to attract all the pollinator babies.  Its narrow, dark green leaves are slightly bitter in taste, and can be added, in small amounts, to salads, soups, and stews.  The aroma of these flower are quite unique, and can be enjoyed either fresh or dried.  Making tea with this plant is also quite soothing, especially if you have a sore throat.  Fun Fact: Hyssop is actually a favorite of beekeepers since it creates a strong aromatic honey.
